Thai-Style Ground Pork Skewers​

Ingredients

  • 1 lb ground pork​
  • 2 tbsp fish sauce​ ​ ​ ​
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp brown sugar (or palm sugar)​
  • 1 tbsp honey​
  • 1 tbsp lime juice​
  • 3–4 cloves garlic, minced (or 1 tbsp garlic paste)​
  • 1 tsp fresh grated ginger​
  • 1/2 tsp white pepper (or black pepper)
  • 1 tbsp cilantro, finely chopped
  • 1 tbsp cornstarch (helps bind and keep juicy)​
  • 1–2 tbsp coconut milk (optional for tenderness)​
  • Wooden or metal skewers (soak wooden in water 30 min)

  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp fish sauce

Directions

  1. In a large bowl, combine ground pork, fish sauce, soy sauce, oyster sauce, brown sugar, honey, lime juice, garlic, ginger, white pepper, cilantro, cornstarch and coconut milk, if using. Mix until sticky and well combined. ​

  2. Divide mixture evenly and press onto skewers, shaping into flat sausage-like strips. Cover and refrigerate for at least 30 minutes, or overnight for more flavor.

  3. Preheat grill to medium heat and lightly oil grates. ​

  4. Grill skewers 4–5 minutes per side, turning occasionally, until lightly charred and cooked through. Cook ground pork to an internal temperature of 160° F.

  5. To make the glaze, combine honey, soy sauce and fish sauce in a small bowl. Brush onto skewers during the last 2 minutes of grilling for a sticky, caramelized finish.
