Spicy Honey-Mustard Glazed Pork Loin

This roasted pork loin is juicy, tender, and coated in a garlicky spicy honey-mustard glaze. As the pork loin roasts, the glaze caramelizes into a sweet & spicy crust that makes this the perfect meal for Sunday dinners and family gatherings.

Ingredients

  • 3–4 lb pork loin, trimmed
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • 2 tbsp neutral oil
  • ¼ cup Dijon mustard
  • 3 tbsp whole grain mustard
  • 3 tbsp honey
  • 2 tbsp hot sauce
  • 1 tbsp apple cider vinegar
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp crushed red pepper flakes
  • 2 tbsp butter

  • 3–4 lb pork loin, trimmed

  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • 2 tbsp neutral oil
  • ¼ cup Dijon mustard
  • 3 tbsp whole grain mustard
  • 3 tbsp honey
  • 2 tbsp hot sauce
  • 1 tbsp apple cider vinegar
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp crushed red pepper flakes
  • 2 tbsp butter

Directions

  1. Preheat oven to 375°F (190°C). Pat the pork loin dry with paper towels. In a small bowl, mix kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne. Rub spice mixture evenly over the pork loin.

  2. In a separate bowl, whisk together Dijon mustard, whole grain mustard, honey, hot sauce, apple cider vinegar, smoked paprika, garlic powder, and crushed red pepper flakes. Reserve half the glaze for serving.

  3. Preheat a large, heavy-bottomed cast-iron skillet over medium-low heat and add 2 tbsp oil. Once oil starts to shimmer, add spice rubbed pork loin. Sear for 2-3 minutes on each side, turning once, until golden brown crust starts to form. Brush the pork with some of the glaze and drizzle with melted butter.

  4. Roast uncovered for about 20 minutes per pound, basting with the remaining glaze every 15-20 minutes until the internal temperature reaches 145-160 degrees F. Remove from the oven and allow a 3-minute rest. Rest up to 15 minutes before slicing.

  5. Brush with remaining glaze and serve with sides like baked mac & cheese, seasoned green beans and rolls to complete this soulful meal.
