Ingredients

  • 1.5 pounds pork tenderloin, thinly sliced
  • 1/2 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tbsp. honey
  • 2 cloves garlic, minced
  • 1 tsp. ginger, grated
  • 1 tbsp. sesame oil
  • 1 tbsp. cornstarch
  • 2 tbsp. avocado or grapeseed oil
  • 3 cups 3 cups frozen stir fry vegetable medley
  • 3 cloves garlic, minced
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. black pepper
  • 1/2 tsp. black pepper
  • 1/2 tsp. seasoning salt
  • Sesame seeds and green onions for garnish (optional)
  • Cooked rice for serving

Directions

  1. Prepare the teriyaki sauce: In a bowl, whisk together soy sauce, mirin, honey, minced garlic, grated ginger, sesame oil, and cornstarch until well combined. Set aside.

  2. Stir fry the pork: Heat 2 tbsp. of vegetable oil in a wok or large skillet over medium-high heat. Add thinly sliced pork to the hot pan. Stir-fry until the pork is browned and cooked through, about 3–5 minutes until reaching an internal temperature of 145–160 degrees F. Remove the pork from the pan and set it aside.

  3. Stir-fry the vegetables: In the same pan, add an additional tbsp. of vegetable oil if needed. Add minced garlic and stir-fry for about 30 seconds. Add the mixed vegetables and stir-fry for  3–5 minutes until they are crisp-tender.

  4. Combine: Return the cooked pork to the pan with the vegetables and toss everything together.

  5. Add teriyaki sauce and coat evenly, cook for an additional 2–3 minutes until the sauce thickens and ingredients are evenly coated.

  6. Serve the Quick Pork Teriyaki Stir Fry over cooked rice. Garnish with sesame seeds and chopped green onions, if desired.
