Pork Tenderloin with Gravy & Apple Cornbread Stuffing

Ingredients

  • 1 Pork Tenderloin, about 1.15lb
  • 2 boxes of cornbread stuffing mix
  • 1 stick of butter
  • 1 stalk of celery
  • 1 onion
  • 2 green apples such as Granny Smith or Green Dragon
  • tbsp. Flour
  • 1 tbsp. all purpose seasoning
  • tbsp. (1 ½ tsp.) smoked paprika
  • ½ tsp. dried oregano
  • ½ tsp. dried thyme
  • ¾ cup olive oil

Ingredients

  • 1 Pork Tenderloin, about 1.15lb
  • 2 boxes of cornbread stuffing mix
  • 1 stick of butter

  • 1 tbsp. all purpose seasoning
  • tbsp. (1 ½ tsp.) smoked paprika
  • ½ tsp. dried oregano
  • ½ tsp. dried thyme
  • ¾ cup olive oil

Directions

  1. Preheat the oven to 350 degrees F.

  2. Combine the all purpose seasoning, paprika, oregano and thyme. Then add the olive oil. Rub this all over the Pork Tenderloin.

  3. Place Pork Tenderloin in the oven, uncovered, cooking uncovered for about 1 hour, until it reaches an internal temperature of 145–160 degrees F with a 3-minute rest.

  4. In the meantime, prepare the stuffing mix (I follow the box instructions.)

  5. Add sliced apples, chopped celery, and chopped onion to the recipe. Set aside.

  6. Remove pork from the oven.

  7. In a pan, melt the butter. Then whisk in the flour and slowly add in the broth from the pork while whisking.

  8. Plate the stuffing first, then add slices of Pork Tenderloin and drizzle gravy over the top.

  9. Slice the Pork Tenderloin.
