Ingredients

  • 4 Bone-In Center-Cut Pork Chops
  • 2 large onions, thinly sliced
  • 3 cloves of garlic, minced
  • 2 tbsp. vegetable oil
  • 1 cup of chicken broth
  • 1 tsp. all purpose flour
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. dried thyme
  • 1 tsp. paprika
  • Salt and black pepper, to taste
  • 4 yellow summer squash, sliced
  • ¼ cup butter (salted or unsalted)
  • 1 tsp. olive oil
  • ½ medium onion, sliced into circles
  • ¼ cup all-purpose flour
  • 1 ½ cup milk
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. garlic powder
  • 1 tsp. sugar (optional)
  • ¼ cup grated Parmesan (optional)

  • ½ medium onion, sliced into circles
  • ¼ cup all-purpose flour
  • 1 ½ cup milk
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. garlic powder
  • 1 tsp. sugar (optional)
  • ¼ cup grated Parmesan (optional)

Directions

  1. Season the pork chops with salt, black pepper, and paprika on both sides.

  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the pork chops and cook for about 4-5 minutes on each side, or until they have an internal temperature of 140—160 degrees F. Remove the pork chops from the skillet and set them aside.

  3. In the same skillet, add the sliced onions and minced garlic. Cook them for about 5—7 minutes, or until they become translucent and slightly caramelized.

  4. Pour in the chicken broth, Worcestershire sauce, and dried thyme. Stir well to combine all the flavors.

  5. Place the pork chops back into the skillet with the onion mixture. Reduce the heat to low, cover the skillet, and let the pork chops simmer for about 20—25 minutes, or until they are cooked to an internal temperature of 140—160 degrees F. Allow a 3 minute rest. Occasionally check the skillet and stir the onions gently to ensure they are evenly cooked and smothered in the flavorful sauce.

  6. Once the pork chops are cooked and the onions are nicely smothered, remove the skillet from the heat.

  7. Wash and clean your squash making sure to remove all of the dirt. Pat dry then cut them into slices.

  8. In a pot over medium-high heat, Add in your butter, onion, olive oil, and flour. Whisk together until flour is dissolved and the mixture thickens. This should take about 3 to 5 minutes.

  9. Once the mixture has thickened, add the squash and milk into the pot. Stir until the squash is coated in the cream sauce. Season with salt, sugar, garlic powder, and pepper. If you’re using Parmesan or cheddar, stir it in now until it’s melted and well combined.

  10. Cook the mixture for another 5 to 10 minutes, stirring occasionally, until everything is cooked down to your desired texture.

  11. Serve the smothered pork chops with the onion mixture spooned over the top. Pair them with your creamed squash.
