Ingredients

  • 1 Pork Tenderloin 
  • 2 tbsp of Jerk seasoning; adjust amount used to taste
  • 1 head of cabbage, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1 capful of apple cider vinegar
  • 1 tbsp. all purpose seasoning
  • ½ tbsp. olive oil

Ingredients

  • 1 capful of apple cider vinegar
  • 1 tbsp. all purpose seasoning
  • ½ tbsp. olive oil

Directions

  1. Season tenderloin with jerk spice.

  2. In a pan on high heat, sear tenderloin on both sides until cooked through to a temperature of 140—160 degrees F.

  3. Remove from heat, allow for a 3-minute rest, and slice.

  4. Add olive oil to a separate pan on high heat. Place cabbage, peppers, onion, vinegar, and seasonings in the pan.

  5. Sauté cabbage until just tender and serve with pork.
