Jerk Pork Tenderloin

Ingredients
- 1 Pork Tenderloin
- 2 tbsp of Jerk seasoning; adjust amount used to taste
- 1 head of cabbage, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 1 capful of apple cider vinegar
- 1 tbsp. all purpose seasoning
- ½ tbsp. olive oil

Directions
Season tenderloin with jerk spice.
In a pan on high heat, sear tenderloin on both sides until cooked through to a temperature of 145—160 degrees F.
Remove from heat, allow for a 3-minute rest, and slice.
Add olive oil to a separate pan on high heat. Place cabbage, peppers, onion, vinegar, and seasonings in the pan.
Sauté cabbage until just tender and serve with pork.
