Ingredients

  • 2 center-cut pork loin chops
  • 1 bunch of asparagus
  • 2 tbsp olive oil
  • salt and pepper to taste
  • lemon wedges (optional)

    Marinade

  • 1/4 cup olive oil
  • 1 tbsp. kosher salt
  • 1/3 cup lemon juice
  • 1 tsp. ground pepper 
  • 3 cloves of garlic, diced
  • 1 tsp. oregano
  • 1 tsp. thyme

Ingredients

  • 2 center-cut pork loin chops
  • 1 bunch of asparagus
  • 2 tbsp olive oil

    Marinade

  • 1/4 cup olive oil
  • 1 tbsp. kosher salt
  • 1/3 cup lemon juice
  • 1 tsp. ground pepper 
  • 3 cloves of garlic, diced
  • 1 tsp. oregano
  • 1 tsp. thyme

Directions

  1. In a Ziploc bag, combine olive oil, kosher salt, lemon juice, ground pepper, chopped garlic, oregano, and thyme.

  2. Add pork chops to the bag and marinate for 1 hour.

  3. Preheat your grill to 375 – 400°F.

  4. Brush the grill grates with olive oil to prevent sticking.

  5. Place the pork chops on the preheated grill and cook for about 4 minutes on one side. Flip and cook for 3 more minutes until they reach an internal temperature of 145 – 160 degrees F. Remove from grill and allow a 3 minute rest.

    Asparagus Instructions

  6. Trim the tough ends of the asparagus spears.

  7. Heat olive oil in a skillet over medium-high heat.

  8. Add the asparagus to the skillet and season with salt and pepper.

  9. Squeeze fresh lemon juice over the asparagus.

  10. Cook the asparagus for about 5-7 minutes, stirring occasionally, until tender. Remove asparagus from the skillet, serve and enjoy!
