Ingredients

  • 2-2 ½ lb. Sirloin Pork Roast
  • 1 tbsp. olive oil
  • 2 tbsp. Italian dressing mix (from 1 Italian seasoning pouch)
  • 3 tbsp. butter (unsalted)
  • 3 garlic cloves, minced
  • 1 tbsp. fresh thyme, chopped
  • 1 tbsp. fresh rosemary, chopped
  • 1 tbsp. fresh parsley, chopped
  • Zest of a lemon
  • 1 cup chicken broth
  • 2 tbsp. water
  • 1 tbsp. cornstarch
  • Salt and pepper to taste
  • 1 lb. fresh green beans (cleaned, stems removed)
  • ¼ cup butter
  • 1 shallot, diced
  • 2 garlic cloves, minced
  • ¼ cup chicken broth
  • Salt and pepper to taste

  • 1 tbsp. cornstarch

  • ¼ cup butter

Directions

  1. Preheat the oven to 350 degrees F.

  2. Pat the roast dry and season with the Italian dressing mix. Rub until completely coated.

  3. In a cast iron skillet over medium-high heat, add olive oil and sear on all sides for 4 minutes each.

  4. In a bowl, mash together the butter with garlic, thyme, parsley, rosemary, and lemon zest.

  5. Generously rub the garlic and herb butter on top and sides of the sirloin pork roast.

  6. Pour chicken broth into the cast iron skillet with the sirloin roast and place in the oven for an hour or until it reaches an internal temperature of 145 – 160 degrees F.

  7. Remove the roast from the skillet to cool. Meanwhile, mix together water and cornstarch to make a slurry.

  8. Pour the slurry into the hot chicken broth that remains in the skillet after the pork roast was removed and stir until it begins to form a gravy. Season with salt and pepper to taste.

  9. Slice the pork, add the gravy on top and pair with mashed potatoes and green beans!

  10. In a large skillet over medium-high heat, add your butter. Once melted, add in the shallots. Sauté for 3 minutes and then add garlic. Sauté for an additional minute.

  11. Add in green beans along with chicken broth.

  12. Cover and let steam for about 8 minutes.

  13. Remove the lid and season to taste with salt and pepper.
