Ingredients
- 3.5 lb sirloin roast
- 1 tablespoon of pepper
- 3 bay leaves
- 1/2 cup of olive oil
- 1 onion (slivered)
- 5 garlic cloves (minced)
- 4 cups chicken stock
Directions
Season both sides with salt and pepper.
Add the oil to a skillet that’s on medium high and add pork. Sear on both sides for 5-7 minutes.
Sauté onions and garlic with the pork until the onions start to brown.
Place pork, onions and garlic into a Dutch oven or slow cooker and add the stock. (If using a slow cooker, you can cook it on high for 5 hours or on low for 8 hours.)
Check that the internal temperature is 145-160 degrees F, then let rest for 3 minutes before shredding and serving.
