  • 2 tsp. salt
  • 1 bunch broccolini

Ingredients

  • 2-3 lb. Sirloin Roast
  • 1/2 red bell pepper, sliced
  • 2-3 jalapeños, seeded and sliced
  • 1/3 cup orange juice
  • 1/3 cup honey
  • 3 tbsp. spoon Cajun seasoning
  • 2 tbsp. butter
  • 1 bunch fresh parsley, finely chopped
  • 1 bunch fresh thyme
  • 2 tsp. dried oregano
  • 1 purple onion
  • 3/4 cup beef broth
  • 3 garlic cloves, minced
  • 1 tbsp. smoked paprika
  • 1 tbsp. onion powder
  • 1 tbsp. smoked garlic powder
  • 1 tsp. black pepper
  • 1 tbsp. lemon juice
  • 2 tbsp. extra virgin olive oil
  • 2 tsp. salt
  • 1 bunch broccolini

Directions

  1. Start by preheating the oven to 350 degrees F.

  2. Then in a small bowl combine these seasonings together with 1 tbsp. olive oil, smoked paprika, onion powder, garlic powder, black pepper, lemon juice, and salt.

  3. Place a cast iron pan on high heat until hot, but not smoking hot. Add cooking oil and sear the roast until well browned on all sides.

  4. Turn off heat, combine orange juice, honey, cajun seasoning, parsley, oregano, and thyme, then pour over roast. Make sure to spread evenly, add beef broth to the pan, sliced peppers, onions and butter.

  5. Place the skillet in the oven and roast for 1–2 hours until reaching an internal temperature of 145-160 degrees F with a 3-minute rest (1 hour for a 2lb pork sirloin roast). Baste occasionally.

  6. Remove from the oven and let roast rest for 10 minutes, then slice against the grain to serve.

  7. Make the optional pan sauce by mixing together a couple of tablespoons cornstarch with water until smooth. Add the cornstarch to the simmering pork juices until it reaches the right consistency and add a bit of red pepper flakes for a little heat if you’re feeling spicy.

  8. While the roast is cooking, boil mini potatoes for about 5-10 minutes. Once cooked, transfer the potatoes to a pan.

  9. Season with salt, pepper, and minced garlic, drizzled olive oil and some parsley and fresh thyme.

  10. Roast mini potatoes for 10-15 minutes on 450 degrees F or until crispy.

  11. In a hot skillet, add minced garlic and broccolini to the pan, sauteed for a minute, season with salt and pepper.

  12. Add 2-3 tbsp. of water and let cook for another minute. Cook longer if desired ( I prefer my vegetables to be less cooked, I love the crunch.)
