Ground Pork Tacos

Ingredients

  • 1 lb. ground pork
  • 14.5 oz. tomatoes (diced, fire-roasted)
  • 1/4 cup onion (chopped)
  • 1 Tbsp. chili powder
  • 1/4 tsp. garlic powder
  • salt (to taste)
  • black pepper (to taste)
  • 8 taco shells
  • 2 tomatoes (cut in wedges)
  • 2 cups iceberg lettuce (shredded)
  • 1 cup cheddar cheese (shredded)

Ingredients

  • 1 lb. ground pork

  • 2 tomatoes (cut in wedges)
  • 2 cups iceberg lettuce (shredded)
  • 1 cup cheddar cheese (shredded)

Directions

  1. In a heavy skillet, brown ground pork, cooking to an internal temperature of 160 degrees F with 3-minute rest.

  2. Stir in undrained canned tomatoes, onion, chili powder and garlic powder. Season to taste.

  3. Bring to boiling; reduce heat and simmer, uncovered, until most liquid evaporates, about 15 minutes, stirring occasionally.

  4. Heat taco shells and portion filling into shells; top with tomatoes, cheese, and lettuce.
