Ground Pork al Pastor Tacos

Ingredients

  • 2 lb. ground pork
  • Corn tortillas
  • 2 tsp. vegetable oil
  • Fresh pineapple, cut into spears or chunks
  • 3 tbsp. chipotles in adobo sauce
  • 3 tbsp. minced, garlic, divided into 2 and 1
  • 2 tsp. salt
  • 2 tsp. garlic powder
  • 1 tsp. black pepper
  • 2 tsp. oregano
  • 1 tsp. smoked paprika
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • 1 tsp. achiote (annatto) paste
  • 1-2 tbsp. fresh lime juice
  • Pineapple Salsa
  • 2 ½ cups of charred and diced pineapples
  • 1 small red onion, finely diced
  • ½ cup cilantro, chopped
  • 1 large jalapeño, diced
  • 1 small red pepper, finely diced
  • 1/4 cup lime juice (2–3 limes)
  • Salt & pepper to taste

  • 3 tbsp. chipotles in adobo sauce
  • 3 tbsp. minced, garlic, divided into 2 and 1
  • 2 tsp. salt
  • 2 tsp. garlic powder
  • 1 tsp. black pepper
  • 2 tsp. oregano
  • 1 tsp. smoked paprika
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • 1 tsp. achiote (annatto) paste
  • 1-2 tbsp. fresh lime juice
  • Pineapple Salsa
  • 2 ½ cups of charred and diced pineapples
  • 1 small red onion, finely diced
  • ½ cup cilantro, chopped
  • 1 large jalapeño, diced
  • 1 small red pepper, finely diced
  • 1/4 cup lime juice (2–3 limes)
  • Salt & pepper to taste

Directions

  1. For the salsa: Brown pineapple spears in a pan over medium heat, 2–3 minutes per side.

  2. Then cool and dice into small pieces. Add to a bowl, along with the other listed ingredients for the salsa.

  3. Mix until well combined, then taste and adjust for salt. Chill for at least 15 minutes.​

  4. Combine the listed spices for the pork in a small bowl, then set aside.​

  5. To a large pan over medium heat, add oil, then the ground pork using a spoon or spatula to break it up. Cook 2–3 minutes, then stir in the minced garlic. Cook until little to no liquid or excess fat remains and ground pork reaches an internal temperature of 160 degrees F.​

  6. Reduce heat to medium, then add spices, lime juice, vinegar, achiote, and chipotle sauce. ​

  7. Stir together until well combined.

  8. Remove from heat and add to desired serving dish.

  9. To warm tortillas, add the cooked pork, then top with plenty of pineapple salsa. Serve and enjoy!​
