Pulled Pork Baked Mac & Cheese

Ingredients

  • 2.5 lbs. pork shoulder ​
  • 2 tbsp. olive oil ​
  • 1 tbsp. salt ​
  • 1½ tsp. Cajun seasoning ​
  • 1 tsp. onion powder ​
  • 1 tsp. paprika ​
  • ½ tsp. ground cumin ​
  • 3 cloves garlic, minced ​
  • 1 tbsp. brown sugar ​
  • 1 cup. chicken broth ​
  • 6 oz. tomato paste ​
  • 2 tbsp. apple cider vinegar (ACV) ​
  • ½ cup chopped white onion ​
  • Your macaroni and cheese (not yet baked) ​

Ingredients

  • 1 tsp. onion powder ​
  • 1 tsp. paprika ​
  • ½ tsp. ground cumin ​

  • 1 tbsp. brown sugar ​
  • 1 cup. chicken broth ​
  • 6 oz. tomato paste ​
  • 2 tbsp. apple cider vinegar (ACV) ​
  • ½ cup chopped white onion ​
  • Your macaroni and cheese (not yet baked) ​

Directions

  1. In a small bowl, mix the Cajun seasoning, salt, onion powder, garlic powder, paprika, ground cumin, and brown sugar. Rub the pork shoulder with the olive oil, then coat it evenly with the seasoning mixture, ensuring all sides are covered. ​

  2. Place the chopped white onion and minced garlic at the bottom of the slow cooker. Set the seasoned pork on top of the onions and garlic.

  3. Pour the chicken broth and apple cider vinegar around the pork (not directly over it to avoid washing off the seasoning). Cover. To pull pork cook to an internal temperature of 180 degrees F with a 3-minute rest with slow cooker either on high for 4–6 hours, or on low for 8–10​
    hours.​

  4. Once the pork is fully cooked, remove it from the slow cooker and shred it using two forks. Discard any excess fat. ​

  5. Preheat your oven to 350 degrees F (175 degrees C). ​

  6. Prepare the desired serving size of macaroni and cheese per the recipe of your choice, up until the point of baking. ​

  7. In an oiled 9” x 12” baking dish, spread a layer of mac and cheese along the bottom, then a layer of pulled pork followed by a layer of additional cheese. Repeat layering sequence until all mac and cheese has been added, then finish with a final layer of shredded cheese on top.​

  8. Place dish in the oven and allow to bake for 20–30 minutes or until the cheese begins to brown. Remove from the oven and let rest for 10 minutes. ​
