Ingredients

  • 4 bone-in pork chops (about 1 inch thick)​
  • 1 tsp salt​
  • ½ tsp black pepper​
  • ½ tsp smoked paprika​
  • 2 tbsp olive oil​
  • 1 cup fresh peaches, diced (or canned, drained)​
  • ¼ cup bourbon (or apple juice if no alcohol)​
  • 3 tbsp brown sugar​
  • 2 tbsp apple cider vinegar​
  • 1 tbsp Dijon mustard​
  • 2 cloves garlic, minced​
  • 1 tbsp butter​

Directions

  1. Pat chops dry and season with salt, pepper, and paprika.​

  2. Heat olive oil in skillet. Sear chops 4–5 min per side until golden brown. Cook pork chops to an internal temperature of 145-160 degrees F with a 3-minute rest.​

  3. In same pan, add peaches, bourbon, brown sugar, vinegar, mustard, and garlic. Simmer 5–7 min until thick and syrupy. Stir in butter.​

  4. Spoon glaze over pork chops and serve with roasted potatoes or rice.​
