Mediterranean Ground Pork Meatballs

Ingredients
- Meatballs
- 2-3 tbsp. of neutral oil
- 1 lb. ground pork
- 1 egg
- ½ cup breadcrumbs
- 3 cloves garlic, minced
- ½ small onion, grated or finely minced
- 1 tbsp. paprika
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. black pepper
- ½ tsp. cayenne
- ½ tsp. salt
- 1 tsp. dried thyme
- 1½ tsp. smoked paprika
- 1 tsp. dried oregano
- Zest of 1 lemon
- 2 tbsp. chopped fresh parsley
- Mediterranean Glaze
- 2 tbsp. olive oil
- 2 tsp. salt
- 1 tbsp. lemon juice
- 1 tsp. honey
- Pinch of cayenne or dash hot sauce
- Pinch of dried mint or parsley

Directions
In a large bowl, combine ground pork with meatball seasoning. Mix gently with hands. Form into 1.5-inch meatballs (makes about 14–18 pieces).
Heat 2–3 tbsp. oil in a skillet over medium-high. Sear meatballs on all sides until browned (5–6 minutes). Reduce heat to medium-low, cover, and cook another 5–7 minutes until the Ground Pork reaches an internal temperature of 160 degrees F before removing for a 3-minute rest.
Mix Mediterranean glaze ingredients in a new bowl. Drizzle over the meatballs while hot so it soaks in.
Serve with Basmati rice, cucumber, tomato, feta, parsley, tzatziki sauce.
