Mango Habanero Grilled Pork Chops

Ingredients

  • 5 (1 1/4-inch thick) Pork Chops​
  • 2 tsp. onion powder​
  • 2 tsp. garlic powder​
  • 2 tsp. smoked paprika​
  • 2 tsp. seasoning salt​
  • ​Mango Habanero Sauce:​
  • 1 ripe mango, peeled and diced​
  • 1 habanero pepper, seeded and diced*​
  • *add seeds from habaneros for more heat if desired. Wear food prep gloves on a disposable item if possible (like a disposable plate) and work in a well ventilated area. If you get pepper juice on your hands, wash thoroughly and do not touch eyes.​
  • Juice from 1 lemon​
  • 2 tbsp. Worcestershire sauce​
  • 2 tbsp. garlic paste​
  • 2 tbsp. tomato paste​
  • 2 tbsp. apple cider vinegar​
  • 2 tbsp. honey

Directions

  1. In a blender or food processor, combine the diced mango, diced habanero pepper, lemon juice, Worcestershire sauce, garlic paste, tomato paste, apple cider vinegar, and honey. Blend until smooth to create the mango habanero sauce. Adjust the amount of habanero pepper according to your desired level of heat. Set aside a portion of the sauce for basting and serving.​

  2. Season the pork chops on both sides with onion powder, garlic powder, smoked paprika, and seasoning salt. ​

  3. Place pork chops in a large flat pan or Ziplock bag, pour mango habanero sauce over it and mix thoroughly. Set aside in the refrigerator for 10 minutes or as long as overnight.​​

  4. Preheat your grill to medium-high heat according to the manufacturer’s instructions. Brush and oil the cleaned grill grates. Once the grill reaches a temperature of 300 degrees F, place pork chops on grill and cook for about 5–6 minutes on each side, until reaching an internal temperature of 145–160 degrees F with a 3-minute rest.​​

  5. Before you baste, set aside some sauce for serving. During the last few minutes of grilling, baste the pork chops generously.​

  6. Serve the grilled chops with coconut rice, mango salsa, and additional mango habanero sauce.
