Lemon Pepper Pork Sirloin

Ingredients
- 2 lbs. Pork Sirloin Roast
- ½ Cup olive oil, divided
- 2 garlic cloves
- 3 ½ tbsp. lemon pepper seasoning
- 2 ½ tbsp. onion powder, divided
- 2 ½ tbsp. garlic powder, divided
- 2 ½ tbsp. seasoning salt, divided
- 2 ½ tbsp. black pepper, divided
- 2 cups chicken broth
- 1 lb baby red potatoes
- 2 cups baby carrots
- 1 onion, chopped
- 1lb. of fresh asparagus, washed and trimmed

- 1 lb baby red potatoes
- 2 cups baby carrots
- 1 onion, chopped
- 1lb. of fresh asparagus, washed and trimmed
Directions
Use a sturdy trivet with your Instant Pot.
Combine baby potatoes, carrots, and 2 tbsp of olive oil in a large bowl. Season with 1 tbsp. each of onion powder, garlic powder, seasoning salt and lemon pepper seasoning. Set to the side.
Combine 3 tbsp of olive oil, 1tbsp. each of onion powder, garlic powder, seasoning salt, pepper, and lemon pepper seasoning in a small bowl. Mix well. Rub the seasoning paste all over the pork sirloin roast.
Press the saute button on Instant Pot. Add the 2 tbsp olive oil, then sear your pork roast inside the Instant Pot, leaving for approximately two minutes on each side to brown.
Remove the pork from the Instant Pot. Add the 2 cups chicken broth to the Instant Pot and deglaze by scraping the browned bits from the bottom of the Pot with a wooden spoon.
Add in onions, baby potatoes, and carrots. Add the pork back. Put the Pot firmly on the trivet and cook at high pressure for 40 minutes. Let the Pot release steam naturally for 15 minutes.
While it is cooking, prepare the asparagus (below).
When the Instant Pot is finished cooking, check that the internal temperature is 145-160 degrees F, then let rest for 3 minutes. Serve the Pork Sirloin Roast with the lemon pepper asparagus.
Preheat oven to 350 degrees F.
Toss clean, trimmed asparagus in 1 tbsp of olive oil and ½ tbsp. each of salt, pepper, garlic powder, and lemon pepper seasoning.
Place on a foil-lined cookie sheet. Roast for 10 minutes, careful not to burn.
