Jerk Pork Tenderloin Stir-Fry with White Rice and Steamed Broccoli
Jerk Pork Tenderloin Stir-Fry with White Rice and Steamed Broccoli is an easy-to-prepare certified family favorite – an amazing twist to stir-fry that’s as nutritious as it is delicious.
Ingredients
- 1 lb. Pork Tenderloin, thin sliced
- 3 tbsp. Jamaican jerk marinade
- 2 tbsp. dry jerk seasoning
- 1/2 sweet onion, sliced
- 1/2 red bell pepper, sliced
- 1/4 green bell pepper, sliced
- 2 tbsp. vegetable oil
- 1 tbsp. soy sauce
- 2 tbsp. browning
- 3-4 green onions, chopped
- 1 can mandarin orange segments
- 1/2 cup peanuts
- 1 tbsp. lemon juice
- 1 tsp. black pepper
- 1 tsp. salt
- 2 tsp. brown sugar
- 2 cups white rice
- 2 1/2 cups water
- 2 tsp. salt
- 1 tbsp. olive oil
- 1 ½ lb. broccoli florets, cut into small pieces
- 1 tbsp. salted butter
- ½ cup water or broth

- 2 cups white rice
- 2 1/2 cups water
- 2 tsp. salt
- 1 tbsp. olive oil
- 1 ½ lb. broccoli florets, cut into small pieces
- 1 tbsp. salted butter
- ½ cup water or broth
Directions
Cut tenderloin in thin, small slices.
Marinate pork with dry and wet jerk seasoning, browning, salt, lemon juice and pepper.
In a hot, non-stick pan or wok, add oil and sugar.
Once sugar is brown add pork. Stir and cook for 5 minutes.
Add soy sauce, peppers, onions, mandarin segments and peanuts.
Cook untill the tenderloin reaches an internal temperature of 145-160 degrees F with a 3-minute rest.
Bring 2 ½ cups of water to a medium pot, add salt and olive oil, then let it come to a boil on medium high heat.
Rinse the rice 1-2x, and then transfer it to the boiling water, be sure to stir it a couple of times to prevent it from clumping. Let it boil until the liquid has reduced, give it one more stir, lower the heat all the way down on low and let it steam for 10-15 minutes. (If you like your rice real fluffy, then try cooking it to 1:1.5 ratio.)
In a hot pan, melt the butter, then add broccoli florets. Cook for about 1 minute and then add the water, cover and let it cook for 2-3 minutes on low heat. (If you prefer your broccoli to cook all the way through then let it cook for up to 10 minutes on very low heat.)
To serve add rice, broccoli florets on top of rice followed by the tenderloin Stir-Fry. Enjoy!
