Jerk Ground Pork Tacos​

Ingredients

  • 1 lb ground pork
  • 6 semi-green plantains, peeled and cut in half​
  • ½ green bell pepper, diced small​
  • ½ red bell pepper, diced small​
  • ½ red onion, diced small, divided​
  • 2 garlic cloves, minced​
  • ½ tomato, diced small​
  • 2 tbsp fresh cilantro, roughly chopped​
  • 1 tbsp low-sodium taco seasoning ​
  • 1 tbsp jerk seasoning​
  • Salt​
  • Coconut oil (or cooking oil of choice)​
  • Avocado (optional)​
  • Shredded mixed cheese (optional)​
  • Sour cream (optional)​

Directions

  1. Coat the plantain halves in coconut oil, then air fry on 400 degrees Fahrenheit for 12 minutes. Flip halfway through.​

  2. While still very hot, place a piece of plantain on parchment paper, place another piece of parchment paper on top, then use a heavy pan to press down to shape the plantain into a circle. Form the circular plantain piece into the shape of a taco by placing it into a taco holder. Repeat quickly until all of the plantain pieces have been shaped.​

  3. Coat the plantain taco shells with coconut oil again, then place back into the air fryer for 8 minutes on 400 degrees Fahrenheit or until golden and crispy. When done, immediately hit each shell with a pinch of salt.​

  4. In a skillet on medium heat add two tbsp of coconut oil. Then, add the diced green and red bell peppers, about half of the red onion, and minced garlic. Sauté for about a minute, then add the ground pork and quickly, but gently, stir so the pork doesn’t stick.​

  5. When the ground pork is nearly browned, add the taco seasoning and jerk seasoning. Continue to brown and stir until the pork is fully cooked registering at 160 degrees Fahrenheit. Remove from the skillet and let rest for three minutes.​

  6. Build the tacos using the cooked ground pork and your favorite taco toppings such as avocado, red onion, tomato, and cilantro. You can also add cheese and sour cream if you enjoy dairy.
