Ingredients

  • 2 tsp Chinese five-spice powder​
  • 1 tsp garlic powder​
  • 1 tsp onion powder​
  • 1 tsp ground ginger​
  • For The Soup:
  • 2 tbsp neutral oil​
  • 2 shallots, diced (or 1 small yellow onion)​
  • 3 cloves garlic, minced​
  • 1 lb ground pork​
  • Easy Pho Spice Blend, full quantity (above)​
  • 4 cups chicken broth​
  • 1 can (14 oz) coconut milk​
  • 2 tbsp brown sugar​
  • 2 tbsp soy sauce​
  • 4 oz pre-chopped and cleaned collard greens (½ a bag)​
  • Salt to taste​
  • For Assembly:
  • 8 oz rice noodles​
  • Fresh herbs (cilantro, mint, basil)​
  • Lime wedges​
  • Sliced jalapeños​
  • Scallions, sliced​

Directions

  1. Heat oil in a medium heavy pot over medium-high heat. Add diced shallots/onions and cook until softened, 3-4 minutes. Add minced garlic, stirring constantly for 1 minute until fragrant.​

  2. Add ground pork and spice blend, breaking the pork into small crumbles as it cooks. Cook Ground Pork 6-8 minutes to an internal temperature of 160°F.​

  3. Add collard greens and mix well. Add brown sugar, soy sauce, chicken broth and coconut milk. Stir and bring to a simmer. Simmer for 15 minutes until the greens are tender, but still bright green and the broth is rich and flavorful. Taste and adjust seasoning with salt.​

  4. Meanwhile, cook rice noodles according to package directions. Divide noodles among bowls and ladle the rich pho broth with greens and pork over top. Garnish with fresh herbs, lime wedges, jalapeños, and scallions. Enjoy immediately. ​
