Ground Pork Chili Cheese Dip

Ingredients
- 1 lb. ground pork
- 1 small onion, diced
- 1 bell pepper (any color), diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) fire roasted diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 can (15 oz) kidney beans, drained and rinsed (optional)
- 1 tbsp Creole seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp black pepper
- ½ cup water or chicken broth
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese (plus more for topping)
- 1/2 cup sour cream
- 1 jalapeño (optional), finely chopped for added heat
- Green onions and cilantro for garnish (optional)

Directions
In a large skillet or pan over medium heat, add the ground pork. Cook for 4-5 minutes until it starts to brown. Drain any excess grease. Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté everything together for another 3-4 minutes until the vegetables are soft.
Add the Creole seasoning, onion powder, garlic powder, smoked paprika, chili powder, cumin, and black pepper. Stir the spices into the pork mixture, coating it evenly.
Stir in the fire roasted tomatoes, tomato sauce, and water (or chicken broth). If you’re using beans, add them now as well. Bring the mixture to a simmer, reduce the heat to low, and let it cook for 10-15 minutes until the ground pork reaches an internal temperature of 160 degrees F with a 3-minute rest. Stir occasionally.
Once the chili is cooked, lower the heat and stir in the softened cream cheese and shredded cheddar cheese until they are fully melted and the dip becomes creamy. Add the sour cream and stir until combined.
If you like it spicy, stir in the finely chopped jalapeño for extra heat.
Transfer the chili cheese dip to a serving bowl or a small crockpot to keep it warm. Garnish with additional shredded cheddar cheese, green onions, and cilantro if desired.
Serve warm with tortilla chips, crackers, or even toasted bread for dipping.
