Ground Pork Bolognese​

Ingredients

  • 2 lbs ground pork​
  • 1 tbsp + 1 tsp Creole Seasoning, divided​
  • ½ tsp black pepper​
  • 2 tbsp olive oil​
  • 1 small onion, finely diced​
  • 1 small carrot, finely diced​
  • 1 celery stalk, finely diced​
  • 3 cloves garlic, minced​
  • 2 tbsp tomato paste​
  • ¾ cup dry red wine​
  • 1 cup whole milk​
  • 1 (28 oz) can crushed tomatoes​
  • ½ cup water​
  • ½ cup heavy cream​
  • 1 tsp Italian seasoning​
  • 1 lb pasta (rigatoni, pappardelle, or spaghetti)​
  • Fresh parsley or basil​
  • Freshly grated Parmesan​

Directions

  1. Heat olive oil in a heavy pot over medium heat. Add onion, carrot, and celery and cook until softened, about 6–8 minutes. Stir in garlic.​

  2. Add ground pork, brown slightly and remove any excess grease before seasoning with 1 tablespoon creole seasoning, and black pepper.​

  3. Stir in tomato paste and cook until slightly darkened. Pour in red wine and let it reduce, scraping up the browned bits from the bottom.​

  4. Add milk and simmer until mostly absorbed. Stir in crushed tomatoes, water, Italian seasoning, and remaining teaspoon of Southern Made Creole Seasoning.​

  5. Reduce heat to low and simmer uncovered 40-45 minutes until ground pork reaches an internal temperature of 160 degrees F. Stir in heavy cream during the last 5 minutes. Taste and adjust seasoning if needed.​

  6. Cook pasta in salted water until al dente. Toss with sauce or spoon generously over the top. Finish with herbs and Parmesan and enjoy!​
