Savory Smoked Pork Tenderloin

Ingredients
- 2-4 Pork Tenderloins 1.5lbs
- For marinade:
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 4 cloves minced garlic
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp crushed red pepper
- For the gravy (optional):
- 2 large yellow onions, thinly sliced
- 4 cloves minced garlic
- 3 tbsp flour
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp of Olive Oil
- 1/2 tsp dried thyme
Ingredients

- 1 tbsp Worcestershire sauce
- 1 tbsp of Olive Oil

Directions
Mix all marinade ingredients into a paste. Rub all over the pork tenderloin. Let sit at room temperature for at least 30 minutes or refrigerate up to 8 hours.
Preheat grill to 250 degrees F. Once grill is heated, add pork tenderloin and let cook for 2-3 hours until reaching an internal temperature of 145-160 degrees F with a 3-minute rest.
Slice and serve warm with gravy over mashed potatoes and veggies.
For The Gravy (Optional): To a pot, pre-heat olive oil, then add onions and cook for 10–15 minutes until deeply golden and softened. Stir in garlic and cook 1 minute. Sprinkle in flour and stir to coat the onions. Slowly pour in beef broth, stirring to prevent lumps. Add Worcestershire sauce and dried thyme. Simmer 2–3 minutes until slightly thickened.
