Crispy Teriyaki Tenderloin and Rice

Ingredients

  • For Teriyaki Tenderloin:
  • 1 pork tenderloin, sliced into medallions
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • ½ tsp. seasoning salt
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp. rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp. ginger, grated
  • 1 tbsp. cornstarch (optional, for thickening)
  • For Rice and Veggies:
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 tbsp. sesame oil
  • 1 tbsp. soy sauce

  • 1 tbsp. soy sauce

Directions

  1. Slice loin into1–1.5-inch thick medallions. Season evenly with garlic powder, onion powder, and seasoning salt. Place the pork loin medallions in a resealable plastic bag or shallow dish.

  2. In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Pour half of the teriyaki marinade over the pork loin medallions. Let them marinate in the refrigerator for at least 30 minutes (or overnight for more flavor).

  3. Preheat your air fryer to 375 degrees F.

  4. Remove the pork from the marinade, discard used marinade, and place the medallions in the air fryer basket, ensuring they are not overcrowded. Cook for 12–15 minutes, turning halfway through until the internal temperature reaches 145–160 degrees F. Allow a three-minute rest.

  5. While the pork is cooking, pour the remaining marinade into a saucepan. Bring it to a simmer over medium heat.

  6. In a separate pan, heat sesame oil over medium heat. Add broccoli and carrots, stir-frying until they are slightly tender. Add cooked rice and soy sauce, stir to combine, and cook for an additional 2–3 minutes.

  7. Plate the air-fried teriyaki tenderloin on a bed of rice and veggies. Drizzle the teriyaki sauce over the pork, and garnish with sesame seeds and green onions if desired.
