Ingredients

  • 4 bone-in pork chops (about 1 inch thick)​
  • 1 tbsp adobo seasoning​
  • 1 tsp smoked paprika​
  • ½ tsp white pepper​
  • ½ tsp black pepper​
  • 1 Tbsp Jerk Sauce​
  • 1 tsp curry powder​
  • 1 tsp thyme (fresh or dried)​
  • 1 yellow bell pepper, sliced​
  • 1 red bell pepper, sliced​
  • 1 green bell pepper, sliced​
  • 1 orange bell pepper, sliced​
  • 2 fresh tomatoes, diced​
  • 1 medium onion, sliced​
  • 4 cloves garlic, minced​
  • 3 green onions, chopped​
  • 1 Scotch bonnet pepper, chopped (adjust for heat preference)​
  • 1 tbsp browning sauce​
  • 2 tbsp ketchup​
  • 1 tbsp brown sugar​
  • 2 tbsp vegetable oil​
  • 1 cup water​

  • 2 tbsp ketchup​
  • 1 tbsp brown sugar​
  • 2 tbsp vegetable oil​

Directions

  1. In a large bowl, combine adobo, smoked paprika, white pepper, black pepper, curry powder, and thyme. Rub this seasoning mixture all over the pork chops. Add the sliced bell peppers, diced tomatoes, onion, garlic, green onions, and Scotch bonnet pepper to the bowl with the pork chops. Pour in the browning sauce and toss everything to combine. Cover and marinate the pork chops overnight in the refrigerator. When ready to cook, separate the pork chops from the marinated vegetables, setting the vegetables aside.​

  2. After removing the pork chops, pour 1 cup of water into the bowl with the leftover vegetables and stir in 2 tablespoons of ketchup. Set this aside to use later.

  3. Heat the vegetable oil in a large pan over medium-low heat. Add the brown sugar and stir continuously until it melts and turns into a caramel-like consistency (about 3-5 minutes). Add the marinated pork chops to the pan and brown them on both sides (about 3-4 minutes per side).

  4. Once the pork chops are browned, add the marinated vegetables (including peppers, onions, garlic, tomatoes, etc.) to the pan. Stir well to combine. Pour the water and ketchup mixture into the pan. Add Jerk sauce. Bring it to a simmer, then lower the heat and cover the pan.

  5. Allow the pork chops to simmer on low heat for 15-25 minutes until reaching an internal temperature of 145-160 degrees F with a 3-minute rest. Stir occasionally and add a bit more water if needed to maintain the sauce consistency. Serve the brown stew pork chops with rice, mashed potatoes, or your favorite sides.
