BBQ Ground Pork Meatloaf

Ingredients
- 2 lbs. ground pork
- 1 diced bell pepper (any color)
- 1 diced onion
- 1 pack of onion soup mix
- 2 large eggs
- 1/3 cup olive oil
- ½ cup breadcrumbs
- 2 tbsp. minced garlic
- 2 tbsp. Worcestershire sauce
- 1 tbsp. black pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1½ tsp. Cajun seasoning
- ½ tsp. paprika
- ½ cup milk
- 1/3 cup BBQ sauce (plus extra for topping)

Directions
Preheat your oven to 350 degrees F (175 degrees C).
In a large mixing bowl, combine the ground pork, diced bell pepper, diced onion, onion soup mix, eggs, breadcrumbs, minced garlic, Worcestershire sauce, black pepper, garlic powder, onion powder, Cajun seasoning, paprika, and milk. Mix everything together until all ingredients are well combined.
Transfer the mixture into an oiled loaf pan or shape it by hand into a loaf on a baking sheet. Press the mixture down evenly so that it holds its shape.
Bake in the preheated oven for 45 minutes. After 45 minutes, pull the meatloaf out of the oven, drain excess grease, and generously brush BBQ sauce over the top of the meatloaf. Return the meatloaf to the oven and bake for an additional 10 minutes until the internal temperature reaches 160 degrees F. Allow a 3-minute rest.
Once the meatloaf is cooked through, remove it from the oven and serve with mashed potatoes and green beans.
