Directions
Heat olive oil in a heavy pot over medium heat. Add onion, carrot, and celery and cook until softened, about 6–8 minutes. Stir in garlic.
Add ground pork, brown slightly and remove any excess grease before seasoning with 1 tablespoon creole seasoning, and black pepper.
Stir in tomato paste and cook until slightly darkened. Pour in red wine and let it reduce, scraping up the browned bits from the bottom.
Add milk and simmer until mostly absorbed. Stir in crushed tomatoes, water, Italian seasoning, and remaining teaspoon of Southern Made Creole Seasoning.
Reduce heat to low and simmer uncovered 40-45 minutes until ground pork reaches an internal temperature of 160 degrees F. Stir in heavy cream during the last 5 minutes. Taste and adjust seasoning if needed.
Cook pasta in salted water until al dente. Toss with sauce or spoon generously over the top. Finish with herbs and Parmesan and enjoy!
