Ingredients

  • 1 lb ground pork
  • 1 tbsp avocado oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 shallot, thinly sliced
  • 1 (16 oz) bag coleslaw mix
  • 3 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • 1 tbsp Creole seasoning (adjust to taste)
  • ½ tsp crushed red pepper flakes (optional)
  • Cooked white rice, for serving (optional)

Directions

  1. Heat the neutral oil in a large skillet over medium-high heat. Add the ground pork and cook, breaking it apart as it browns. Season with Creole seasoning and crushed red pepper flakes. Continue cooking until the pork reaches an internal temperature of 160°F. Remove ground pork from skillet and set aside.

  2. Return the skillet to medium heat and add the garlic, ginger, and sliced shallots. Sauté until fragrant and softened. Stir in the coleslaw mix and cook for 3–5 minutes, just until the cabbage wilts while still maintaining some crunch.

  3. Add the soy sauce, rice vinegar, and sesame oil, tossing everything together until well combined and evenly coated. Taste and adjust seasoning as needed.

  4. Finish with sliced green onions and serve hot, either on its own or over a bed of white rice.
