  • 2-3 tbsp. of neutral oil
  • 1 lb. ground pork
  • 1 egg
  • ½ cup breadcrumbs
  • 3 cloves garlic, minced
  • ½ small onion, grated or finely minced
  • 1 tbsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. black pepper
  • ½ tsp. cayenne
  • ½ tsp. salt
  • 1 tsp. dried thyme
  • 1½ tsp. smoked paprika
  • 1 tsp. dried oregano
  • Zest of 1 lemon
  • 2 tbsp. chopped fresh parsley
  • Mediterranean Glaze
  • 2 tbsp. olive oil
  • 2 tsp. salt
  • 1 tbsp. lemon juice
  • 1 tsp. honey
  • Pinch of cayenne or dash hot sauce
  • Pinch of dried mint or parsley

Directions

  1. In a large bowl, combine ground pork with meatball seasoning. Mix gently with hands. Form into 1.5-inch meatballs (makes about 14–18 pieces).

  2. Heat 2–3 tbsp. oil in a skillet over medium-high. Sear meatballs on all sides until browned (5–6 minutes). Reduce heat to medium-low, cover, and cook another 5–7 minutes until the Ground Pork reaches an internal temperature of 160 degrees F before removing for a 3-minute rest.

  3. Mix Mediterranean glaze ingredients in a new bowl. Drizzle over the meatballs while hot so it soaks in.

  4. Serve with Basmati rice, cucumber, tomato, feta, parsley, tzatziki sauce.
