Cajun Cream Pork Tenderloin Pasta

Ingredients
- 1 ½ lbs pork tenderloin, sliced into thin strips
- 2 tbsp Cajun Seasoning
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 ½ cups heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 12 oz penne pasta, cooked al dente
- 2 tbsp fresh parsley, chopped
Ingredients
- 1 ½ lbs pork tenderloin, sliced into thin strips
- 2 tbsp Cajun Seasoning
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 ½ cups heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 12 oz penne pasta, cooked al dente
- 2 tbsp fresh parsley, chopped
Directions
Season pork strips with Cajun seasoning. In a large skillet, heat olive oil and sear pork until browned (5–6 min). Cook tenderloin to an internal temperature of 145-160 degrees F with a 3-minute rest. Remove and set aside.
In the same skillet, add onion, pepper, and garlic.
Stir in heavy cream, broth, and Parmesan. Simmer 5 min until thickened.
Add pork back in, along with pasta. Toss to coat.
Garnish with parsley and serve hot.
