Savory Smoked Pork Tenderloin

Ingredients

  • 2-4 Pork Tenderloins 1.5lbs​
  • For marinade:​
  • 2 tbsp olive oil​
  • 1 tbsp Dijon mustard ​
  • 4 cloves minced garlic​
  • 1 tbsp dried rosemary​
  • 1 tbsp dried thyme​
  • 2 tsp kosher salt​
  • 1 tsp black pepper​
  • 1 tsp smoked paprika​
  • 1/2 tsp onion powder​
  • 1/2 tsp crushed red pepper​
  • For the gravy (optional):​
  • 2 large yellow onions, thinly sliced​
  • 4 cloves minced garlic​
  • 3 tbsp flour​
  • 2 cups beef broth​
  • 1 tbsp Worcestershire sauce​
  • 1 tbsp of Olive Oil​
  • 1/2 tsp dried thyme​

Directions

  1. Mix all marinade ingredients into a paste. Rub all over the pork tenderloin. Let sit at room temperature for at least 30 minutes or refrigerate up to 8 hours.​

  2. Preheat grill to 250 degrees F. Once grill is heated, add pork tenderloin and let cook for 2-3 hours until reaching an internal temperature of 145-160 degrees F with a 3-minute rest. ​

  3. Slice and serve warm with gravy over mashed potatoes and veggies.​

  4. For The Gravy (Optional): To a pot, pre-heat olive oil, then add onions and cook for 10–15 minutes until deeply golden and softened. Stir in garlic and cook 1 minute. Sprinkle in flour and stir to coat the onions. Slowly pour in beef broth, stirring to prevent lumps. Add Worcestershire sauce and dried thyme. Simmer 2–3 minutes until slightly thickened. ​
