Carolina BBQ Baby Back Ribs

Ingredients

  • 1 rack pork ribs (baby back or spare)​
  • Yellow mustard (for binder)​
  • For the Dry rub:​
  • 2 tbsp brown sugar​
  • 1 tbsp smoked paprika​
  • 1 tbsp kosher salt​
  • 1 tsp garlic powder​
  • 1 tsp onion powder​
  • 1/2 tsp ground mustard​
  • 1/2 tsp black pepper​
  • 1/4 tsp cayenne pepper ​
  • For the South Carolina Mustard BBQ Sauce:​
  • 3/4 cup yellow mustard​
  • 1/4 cup honey​
  • 1/4 cup apple cider vinegar​
  • 2 tbsp brown sugar​
  • 1 tbsp ketchup​
  • 1 tsp Worcestershire sauce​
  • 1/2 tsp garlic powder​
  • 1/4 tsp cayenne pepper​
  • Salt & pepper to taste​

  • 1 tbsp ketchup​
  • 1 tsp Worcestershire sauce​
  • 1/2 tsp garlic powder​
  • 1/4 tsp cayenne pepper​
  • Salt & pepper to taste​

Directions

  1. Remove the membrane from the back of the ribs. Rub a layer of yellow mustard on the ribs as a binder. Apply the dry rub on both sides. Let rest at room temp for 30 minutes or refrigerate up to 8 hours.​

  2. In a small saucepan, combine all sauce ingredients. Bring to a simmer over medium heat, stirring until smooth. Lower heat and simmer 10–15 minutes. Cool and set aside ​

  3. Preheat grill to 250 F*. Place ribs on the cooler side of the grill, bone-side down. Cook for 3 hours, spritzing with apple cider vinegar or water every hour.​

  4. After 3 hours, wrap ribs in foil with a little honey or butter for added moisture. Return to grill and cook another hour until the internal temperature reaches 145-200 degrees F with a 3-minute rest.​

  5. Unwrap ribs and brush with the Carolina Mustard BBQ sauce. Cook for another 30 minutes, brushing on another layer in the last 10 minutes to caramelize.​

  6. Serve warm & enjoy! ​
