Ground Pork Breakfast Casserole

Ingredients
- 1 lb. ground pork
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 cup sweet potato (peeled, diced)
- 2 cups mushrooms (sliced)
- 1 red bell pepper (diced, seeds removed)
- 6 cups spinach
- 12 eggs
- 1 1/2 cups milk
- 1/2 cup green onions (sliced)

Directions
Preheat oven to 350°F.
Heat a skillet over medium-high heat. Add ground pork and brown for about 7 minutes until reaching an internal temperature of 160 degrees F with a 3-minute rest. Drain any excess grease.
Add diced sweet potatoes to the skillet and cook for 4 minutes. Add in red pepper, mushrooms, green onion and sauté for an additional 3 minutes until veggies are soft. Add fresh chopped spinach and cook for one more minute stirring until everything is combined.
Add the ground pork and veggie mixture to a greased 9×13 baking dish.
Whisk the eggs, milk, salt and pepper together in a large bowl, then pour into the casserole dish. Bake for 35-40 minutes, or until golden brown. Serve immediately.
