Ingredients
- 1 lb. ground pork
- 2 15 oz. cans baked beans
- ½ yellow onion, diced
- 2 garlic cloves, minced
- 1 scallion, chopped
- ½ green bell pepper, diced
- 2 tsp. all-purpose seasoning
- 1 tsp. smoked paprika
- ½ cup BBQ sauce
- ¼ cup brown sugar
- 1 tbsp. yellow mustard
- 1 Scotch bonnet pepper — optional
Directions
Preheat oven to 350 degrees F. On the stovetop, brown the pork in a lightly oiled skillet on medium-high heat (approx. 5 minutes). Remove from the skillet once browned.
In the same skillet, sauté the onion, garlic, scallion, and bell pepper until fragrant (approx. 2–3 minutes).
Add the meat back to the skillet with the sautéed aromatics. Season with all-purpose seasoning and smoked paprika and mix well.
Stir in the baked beans, along with half of the BBQ sauce, brown sugar, mustard, and Scotch bonnet (optional). Bring to a simmer, then reduce the heat to low. Allow to simmer for 10 minutes.
Turn off the heat. Remove the Scotch bonnet from the skillet, then drizzle over the remaining BBQ sauce. Bake uncovered for 30 minutes. Stir well before serving.
