Ingredients

  • 5 (11/4-inch thick) Pork Chops​
  • 1 tsp. Onion Powder​
  • 1 tsp. Garlic Powder​
  • 1 tsp. Smoked Paprika​
  • Salt and Pepper to taste​
  • Korean BBQ Sauce Ingredients​
  • ½ Asian pear, grated​ (or one Bartlett, Bosc, or other variety)
  • ½ of a medium onion, thinly sliced
  • ½ cup soy sauce​
  • 1 tbsp. sesame oil​
  • 2 tbsp. brown sugar​
  • 2 tbsp. ginger paste or pressed/grated fresh ginger
  • 2 tbsp. garlic paste or pressed/grated fresh garlic
  • 3 green onions (scallions), sliced
  • 1 tbsp. cayenne
  • 1 tsp. cornstarch (optional thickener)​
  • 1 tbsp. water​

Directions

  1. In a pan, whisk the cornstarch in water until dissolved, then add grated pear, sliced onion, soy sauce, sesame oil, brown sugar, ginger paste, garlic paste, chopped green onions, cayenne pepper.. Mix well to combine; Bring to a gentle boil, then reduce heat to simmer for 3–5 minutes until the sauce reduces.​

  2. Season pork chops on both sides with onion powder, garlic powder, smoked paprika, salt, and pepper. Rub the seasonings evenly into the meat.​​

  3. Preheat your grill to medium-high heat according to the manufacturer’s instructions. Brush and oil the cleaned grill grates. For charcoal grills, arrange the coals on one side of the grill to create a cooler zone away from direct flames. Once the grill reaches a temperature of 300 degrees F, place pork chops on grill directly over fire and baste generously with BBQ sauce. Flip after 3 minutes and repeat the process on the other side.​​

  4. Transfer pork chops to a cooler part of the grill and baste with sauce again for 2 minutes on each side until meat reaches an internal temperature of 145–160 degrees F with a 3–minute rest. Serve with grilled corn on the cob.​​
