Ingredients
- 1 lb. ground pork
- 1/2 cup diced onion
- 1/2 cup diced jalapeño
- 2 tbsp. store-bought jerk sauce
- 1 tbsp. seasoning salt
- 1 tbsp. taco seasoning
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. smoked paprika
- 1 cup sharp cheddar, shredded, plus additional for serving
- Small flour or corn tortillas
Directions
In a bowl, combine ground pork, diced onion, diced jalapeño, store-bought jerk sauce, seasoning salt, taco seasoning, garlic powder, onion powder, and smoked paprika.
Heat a skillet over medium-high heat. Divide the ground pork mixture into portions and place them on the hot skillet. Use a spatula to smash the meat down, cooking for 2–3 minutes on one side.
Flip the smashed meat portions. Sprinkle shredded sharp cheddar over each portion. Place a tortilla on top of each meat and cheese portion. Press down to help it stick together.
After 1 minute, carefully flip the portions so the tortilla is now on the bottom. Cook on the tortilla side for an additional 2–3 minutes, or until the cheese is melted and the meat is cooked through to an internal temperature of 160 degrees F with a 3-minute rest.
Remove the Smash Jerk Taco portions from the skillet. Add your favorite toppings, such as shredded lettuce, tomatoes, onions, cilantro and sharp cheddar.
