Ingredients

  • 1 1lb Pork Chop
  • 1 teaspoon Memphis dry rub BBQ seasoning (sweet, smokey, spicy flavor)
  • ½ teaspoon of garlic powder
  • ½ teaspoon of black pepper

    Salad Ingredients

  • 1 head of romaine, chopped
  • ½ avocado, sliced
  • 1 cup cherry tomatoes, sliced
  • ¼ red onion, sliced
  • ½ cup yellow sweet corn

    Blue Cheese Dressing Ingredients

  • ½ cup mayo
  • ½ cup sour cream
  • 1 teaspoon white vinegar
  • 1 cup crumbled blue cheese
  • Kosher salt & black pepper to taste

    Blue Cheese Dressing Ingredients

  • ½ cup mayo
  • ½ cup sour cream
  • 1 teaspoon white vinegar
  • 1 cup crumbled blue cheese
  • Kosher salt & black pepper to taste

Directions

  1. Season pork chop with dry BBQ rub, garlic powder & black pepper.

  2. Heat a cast iron grilling pan on medium/medium high heat. Brush with vegetable oil to prevent sticking.

  3. Set grill to medium high heat at 375-400 degrees F. Place the Pork Chop over direct heat for about 3-5 minutes on each side. Then move the Pork Chop to indirect heat until reaching an internal temperature of 145-160 degrees F. Allow a three-minute rest.

  4. Cut the chop into cubes.

  5. Add chopped romaine into a bowl.

  6. Top with corn, red onions, and cherry tomatoes.

  7. Add in cubed pork chop.

  8. Garnish with avocado slices.

  9. Add blue cheese dressing, to taste.

  10. Combine all ingredients together in a bowl and let sit for an hour to let flavors develop.

  11. Mix well and add a dollop to your bowl, to taste.
